Grilled zucchini bagel with tomato, Parmesan cheese shavings, and vinaigrette

Ingredients
  • 4 Bimbo® Seeded Bagels
  • 1 medium zucchini, thinly sliced
  • 2 medium tomatoes, sliced
  • 50g Parmesan cheese shavings
  • 2 tablespoons olive oil
  • Salt to taste
  • Ground black pepper to taste

For the vinaigrette:

  • 2 tablespoons balsamic vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt to taste
  • Ground black pepper to taste
LET’S MAKE IT!

Prepare the vinaigrette: In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and honey. Add salt and pepper to taste. Set the vinaigrette aside.
Heat a griddle or skillet over medium-high heat and add a tablespoon of olive oil.
Place the zucchini slices on the hot griddle and cook for 2-3 minutes per side, or until tender and grilled. Season with salt and pepper to taste. Remove the zucchini from the griddle and set aside.
Lightly toast the bagel halves in a toaster or preheated oven until lightly golden.
Spread the vinaigrette on the inside of each bagel half.
Place the tomato slices on two of the bagel halves with the vinaigrette.
Arrange the grilled zucchini slices over the tomatoes on each half. Place the Parmesan cheese shavings on top of the zucchini slices on each bagel half.
Place the other bagel half with vinaigrette on top of the tomato, zucchini, and cheese layers to close the sandwiches.
