Roasted eggplant, tomato and goat cheese bagel with honey

Ingredients
  • 2 Bimbo® Classic Bagels
  • 1 large eggplant
  • 2 medium tomatoes
  • 100g goat cheese
  • 2 tablespoons honey
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (optional, for garnish)
LET’S MAKE IT!

1. Preparing the ingredients:
– Wash and thinly slice the tomatoes.

– Slice the eggplant into rounds approximately 1 cm thick.

– Crumble the goat cheese into small pieces.

2. Roasting the eggplant:
– Preheat the oven to 200°C (390°F).

– Place the eggplant slices on a baking sheet and drizzle with olive oil. Season with salt and pepper to taste.

– Roast the eggplant slices in the preheated oven for 20-25 minutes, or until tender and lightly browned. Remove from the oven and let cool slightly.

3. Assembling the sandwich:
– Take half of a Bimbo® Classic Bagel and place some roasted eggplant slices on one half.

– Add some tomato slices on top of the eggplant.

– Sprinkle some crumbled goat cheese over the tomato. – Drizzle a tablespoon of honey over the goat cheese.

– Place the other half of the bagel on top and gently press down to combine all the ingredients.

4. Finish and serve:
– Repeat the process for the second sandwich.

– If desired, garnish the sandwiches with fresh basil leaves.

– Serve the roasted eggplant, tomato, and honey goat cheese sandwiches immediately and enjoy them while they’re hot.
