Avocado, tomato and poached egg bagel with hollandaise sauce

Ingredients
  • 2 Bimbo® Classic Bagels
  • 2 ripe avocados
  • 2 medium tomatoes
  • 4 eggs
  • 2 teaspoons white vinegar
  • Salt and pepper to taste

For the hollandaise sauce:

  • 3 egg yolks
  • 150 g unsalted butter
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Hot water (for the double boiler)
LET’S MAKE IT!

1. Preparing the ingredients:
– Wash and thinly slice the tomatoes.

– Peel the avocados, remove the pit, and slice or mash with a fork to make an avocado paste.

– Separate the egg yolks and reserve the whites for another use.

– Cut the butter into small cubes.

2. Preparing the hollandaise sauce:
– In a small saucepan, melt the butter over low heat until completely liquid. Keep warm but do not boil.

– In a heatproof bowl, whisk the egg yolks and lemon juice until well combined.

– Place the bowl over a pan of hot water (double boiler) over medium-low heat. Make sure the bottom of the bowl does not touch the water.

– While whisking, gradually pour the melted butter over the egg yolks in a steady stream. Continue whisking until the sauce thickens and has a smooth consistency. Season with salt and pepper to taste. 1. Remove from heat and set aside the hollandaise sauce in a warm place until needed.

2. Poach the eggs:

3. Fill a medium saucepan with water and add the white vinegar. Bring the water to a medium-high boil.

4. Crack an egg into a small bowl without breaking the yolk.

5. Create a gentle whirlpool in the hot water with a spoon and carefully slide the egg into the center of the whirlpool. The whirlpool will help the egg retain its round shape.

6. Poach the egg for 3-4 minutes, until the white is firm but the yolk is runny. Repeat with the remaining eggs.

7. Remove the poached eggs from the water with a slotted spoon and place them on paper towels to absorb any excess water.

8. Assemble the bagel:
9. Take half of a Bimbo® Classic Bagel and spread the avocado spread on the inside of both halves. – Place a few slices of tomato on one half of the bagel.

Carefully add a poached egg on top of the tomato.

Cover the sandwich with the other half of the bagel, pressing gently to combine all the ingredients.

5. Serving the bagel:

– Repeat the process for the second bagel.

– Serve the avocado, tomato, and poached egg sandwiches with hollandaise sauce immediately. You can add a dollop of hollandaise sauce on each poached egg and garnish with fresh parsley if desired.
